I’ve always been focused on my health when it comes to food. For as long as I can remember I ate as healthy as possible. There was never a time where I would avoid a healthy meal, granted it tasted good. Salads, as far as most people know, are always an incredibly healthy meal. They’re a fun, customizable way to enjoy a medley of all of your favorite super foods together. Salads can take on so many different types of forms.

There’s Caesar salad, which can sometimes include chicken but always starts out with a very simple based of lettuce. There’s the standard American-style salad, with thick-cut vegetables that can be sometimes topped with cheese or ranch. There’s Mediterranean salad, which always includes a nice combination of diced-up veggies alongside some feta cheese or olives. Then there’s arugula salad, something that’s gotten really popular over the past few years.

Arugula salad’s are a fun, simplistic way to get in a healthy meal while still retaining a great flavor that, because of how easy they are to make, can be customized in so many ways! This recipe is a great one, one of my personal favorites, that combines the refreshing flavors of certain fruits with the sort of basic and mild flavor of arugula. It’s a match made in Heaven.

It’s a pomegranate-arugula salad, and nothing else can match it! It only takes between 15-20 minutes to prepare and serves up to 6 people. (Recipe inspired by edible communities)

Ingredients:

  • 10 ounces arugula
  • 1 Whole Pomegranate
  • 1/2 A Red Onion
  • 1/4 teaspoon salt
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons olive oil
  • 1/2 Cup Toasted Walnuts
  • 6 ounces feta cheese
  • Optional fruit of choice (I suggest clementine)

Procedure:

  1. Wash the onion, arugula, and pomegranate. Dry each one.
  2. Slice the onion into thin slices and leave them to rest in a bowl of cold water. Take them out a little afterwards and dry them.
  3. Put the arugula, onion, vinegar, oil, and salt in one large salad bowl and mix them together.
  4. Add the nuts, feta cheese, and pomegranates on top.
