If you’re like me, you love all things chicken. That’s why, today, I want to share one of the best chicken recipes I’ve ever had. This is actually my mom’s recipe and I’m sure you’ll love it. It’s packed with delicious and flavor. I used the chicken to make a chicken burrito which just further enhanced that already prominent flavor. Check out me making that burrito in video form below:
This recipe brought chicken full of flavor. I like to enjoy it with different things like hummus, avocado salad, and it even just tastes amazing on its own or with some spicy peppers. I also fried up some cauliflower, eggplant, and fries which you can see through one of the platforms above. Everything I added to it can be seen in the image below:
I don’t want to hold you away from that beautiful smell of the chicken any longer, so without further ado, here are the ingredients you’ll need:
- 6 chicken breast
- 1 medium thinly sliced yellow onion
- 4 diced cloves of garlic
- Handful of chopped up cilantro
- Coriander – 3 teaspoons
- Olive oil
- Squeeze of lemon
- Cumin – 3 teaspoons
- Ginger – 1/2 teaspoons
- garlic powder – 2 teaspoons
- Cayan pepper – 1 teaspoon
- Chili powder (optional – but if you don’t include add 1/2 teaspoon more of coriander and cumin)
- Salt to taste
That may seem like a lengthy list, but it was actually very easy to prepare and it was definitely worth any work it took.
After you’ve collected your ingredients, do the following:
- First, cut up chicken into strips
- Add olive oil into a pot/pan and add chicken to it
- Mix and add all seasoning along with lemon
- Let it simmer at high heat with occasional stirring for 10 minutes
- Add in the onion and garlic
- Mix it together and allow it to cook until all water is gone with only olive oil left
- Keep stirring until golden
- Add the fresh cilantro
- Mix and turn off the heat
Then, your chicken is done! This was a super easy, tasty, and overall delicious dish.
